Tomato & pumpkin Bulgur Wheat Pilaf

Bulgur is a cracked and dried wheat.It is low in fat, high in protein, high in fiber, antioxidants, magnesium, and manganese. This kind of grain is considered Low Glycaemic Index food which is suitable for a person with diabetes.It can be a good substitute for rice.

Ingredients

  • 1  cup brown Bulgur wheat
  • 1  Cup chopped tomatoes 
  • 1  Cup cubed pumpkin 
  • 3 Cups of water
  • 1 tsp of salt
  • 1 tsp of Turmeric
  • 1 tsp of Cinnamon powder 
  • 1 tsp of Cumin powder 
  • ¼ tsp Black pepper 
  • 1 cup of fresh coriander

Method

  1.  In a pressure cooker add the washed bulgur wheat with 3 cups of water.
  2. Add the tomatoes and pumpkin
  3. Add the spices and salt ( according to your taste)
  4. Cook for 10 minutes or according to your pressure cooker time.
  5. Serve it warm by mixing fresh chopped coriander
