Mung Beans Veggie Mix

A power-packed mung bean appetizer which contains a variety of ingredient ranging from sweet-sour pomegranate to juicy, refreshing cherry tomatoes could be your ideal way to include in your lunch meal. This exorbitant flavours will nourish your lunch.

Ingredients

    1. cup pre soaked ( preferably overnight) green beans, 
    2. 2  cup water 
    3. 1 cup chopped mixed leafy greens vegetable( Romaine lettuce,  Kale, Swiss chard )
    4. ½ cup of Arugula / Rocket 
    5. 1 cup shredded Turnip
    6. 1 cup shredded Carrot 
    7. ½ cup sprouted Alfalfa
    8. ½ cup of Broccoli 
    9. 1/2  cup  chopped Cherry tomatoes 
    10. 1 tbsp chopped walnut 
    11. 1 tsp of  raisin 
    12. 1 tbsp of grounded chia seeds 
    13. 1 tsp of Nutritional yeast 
    14. 2 tbsp Pomegranate seeds for 

    Dressing 

    1. 1 tsp of Balsamic vinegar 
    2. 1 tsp concentrated pomegranate syrup 
    3. A pinch of salt 
    4. 2 tbsp of water

Method

  1. In a pressure cooker,  add the pre-soaked green beans and water. Cook it for 10 minutes or till the beans are cooked. 
  2. Add all the vegetables in a bowl and add the cooked green beans.
  3. Mix it well with the dressing 
  4. Lastly add the walnut,  raisin , Nutritional yeast and grounded chia seeds. 
  5. Serve it as warm salad or cold salad.
