Gotu Kola with Sweet potatoes in Coconut Stew ( Lontong)

Gotu Kola is a medicinal herb. It also known as Indian Pennywort, Pegaga and Vellarai. We can have it as a salad or stew. It is a bit bitter but it can be a great source of brain booster. It grows as weed in many countries including in Malaysia.

Ingredients

  • 2 cups of Gotu kola sliced/ whole leaf
  • 2 cups of sweet potatoes
  • 5 small onion
  • 2 inch ginger
  • 1/4 inch fresh tumeric
  • 5 gloves garlic
  • 1  fresh green chili
  • 1 stalk lemon grass ( crushed)
  • 1/2 cup coconut milk/ cream
  • 3 cups of water
  • salt accordingly

Method

  1. Add the onion, ginger, tumeric, garlic, fresh chili in a mortar and make a paste or put in a blender and grind it.
  2. Chop the sweet potatoes in 1 inch or 2 inch cubes .
  3. Add the potatoes , crushed lemon grass and  the paste in a pan with the water and and bring to boil for 10 minutes or till the potatoes are cooked.
  4. Add the Gotu Kola in the pan for 2 minutes and remove it from the stove .
  5. Add the coconut milk/ cream and lastly add the salt.
  6. Enjoy with warm rice.
  7. You can add few tempeh, tofu, brinjal and long beans  and soo hoon.
