Anti oxidant Potato Salad

Potatoes are wonderful root vegetables. It is one of the best way to replace as complex carbohydrates instead of rice. Having few types colourful potatoes makes the meals more complete with antioxidants ,vitamins and minerals.

Ingredients

  • 1 medium white potatoes
  • 1 medium red potatoes
  • 1 purple Japanese potato
  • 1 orange sweet potato
  • 1 tsp of rosemary
  • 1 tbsp of garlic powder
  • 1 tbsp onion powder
  • 1 tsp of salt
  • A pinch of pepper

Method

  1. Chopped all the potatoes into desired cubes.
  2. Put in a pressure cooker, cook it for 10 minutes.
  3. Remove the water , add the salt , pepper, onion powder, garlic powder , rosemary . Mix it well.
  4. Optional: You can either eat it as a salad or roast for extra 15 minutes in the oven to make it crispy.
  5. Enjoy the potatoes with a bowl of green salad.
