One Pot Veggie Mix Rice

Rice is an indispensable food in the Asian platter but it has be under scrutiny for being contributor of diabeties mellitus for asian people. However, a type of rice, such as parboiled rice has a Low GI (glycaemic index) can be replaced from the normal type of rice.

Ingredients

  • 1 cup washed parboiled rice 
  • 3  cups  water or vegetable stock 
  • 1/2 cup of diced Tomato
  • 1/2 cup of  Turnip cubes 
  • 1/2 cup of Carrot cubes
  • 1/2 cup of Green peas
  • 1 cup  chopped fresh English parsley 
  • 1 cup chopped fresh Cilantro
  • 1 tsp of Tumeric 
  • 1 tsp of salt 
  • 1 tsp grounded black pepper
  • 1 tsp grounded coriander seeds
  • 1 tbsp of flax seeds

Method

  1. Add the washed rice In a pressure cooker. 
  2. Add the vegetables inside with 3 cups of water/ vegetable stock 
  3. Add the rest of the ingredients and cook it for 10 minutes or till the rice is cooked. 
  4. Add the chopped cilantro and English parsley and mix with cooked rice. 
  5. Sprinkle the grounded flax seeds on the rice before serving.
